‘Ohana Bread Pudding

All three of my kids are now teenagers in the thick of growth spurts and basically never not eating, so it is no surprise that snacks and meals are a top priority when we vacation. A restaurant where they request to dine time and time again is ‘Ohana at Disney’s Polynesian Village Resort. Open for both breakfast and dinner, the portions here are plentiful and delicious and guaranteed to keep my always starving kiddos happy. ‘Ohana also happens to be home to one of my all-time favorite Disney desserts, ‘Ohana bread pudding, so it’s a win-win dining experience every time! For a little taste of some of this goodness that awaits you at the Polynesian, look no further than the recipe below to make your own version of this amazing dessert at home!

OHANA BREAD PUDDING

INGREDIENTS

Bread Pudding:

  • 12 Hawaiian Sweet Rolls
  • 5 eggs
  • 1 ½ cups half and half
  • 1 ½ cups whole milk
  • ½ cup sugar
  • ½ cup brown sugar
  • 1 tsp. cinnamon
  • 1 tsp. vanilla extract
  • 8 oz. canned crushed pineapple, drained

Bananas Foster Sauce:

  • ½ cup light corn syrup
  • ½ cup salted butter
  • ½ brown sugar
  • ½ sugar
  • 1 cup heavy cream
  • 1 tbsp. rum extract
  • 2 to 3 bananas, sliced

DIRECTIONS

  1. Preheat the oven to 350 degrees. Cut Hawaiian rolls into cubes and place them in a 9×9 square baking dish. In a bowl, whisk together the remainder of the ingredients for the bread pudding. Pour this egg mixture over the cubed rolls, and allow it to sit for about 10 minutes so that the bread has time to soak in most of the liquid.
  2. Place in preheated oven and bake for 45 to 60 minutes, until the bread is golden brown and the center is set.
  3. When the pudding is done, place the corn syrup, butter, and both sugars in a saucepan on the stovetop and turn the heat to medium. Bring to a low boil and then slowly stir in the heavy cream. Continue cooking until the caramel reaches a full rolling boil, then remove from heat and add the rum extract and sliced bananas.
  4. To serve, cut the bread pudding into desired portions, place a scoop of your favorite vanilla ice cream on top of each, and generously drizzle the warm bananas foster sauce over everything and enjoy!
